Recipe: Breakfast Bean Tortilla

I mentioned recently that I am phasing eggs (and, actually, all dairy products) out of my diet. What I did not mention is why... After decades of being a vegetarian, I am slowly (very slowly) venturing toward veganism.

In light of that, I had to come up with a new protein packed, delicious - but most importantly *fast* - breakfast I can prepare in under 5 minutes each morning. This is what I came up with - an awesome Breakfast Bean Wrap! How did I not think of this sooner?!

Ingredients:

  • Olive Oil (1 tsp) = 1 point
  • Beans (any kind), 1/2 cup = 1 point
  • Onions, chopped (about 2 tbsp)
  • Cilantro, chopped (about 2 tbsp)
  • Other veggies (peppers, shallots, garlic, tomatoes, whatever)
  • Corn Tortilla, 1 = 1 point
Ingredients
I heat up the cast iron pan while I'm chopping my vegetables or preparing my coffee (I am now getting in the habit of cutting up the vegetables ahead of time). I add the oil, beans and veggies and stir over high heat for about 2 minutes.

Then I put the corn tortilla on *top* of the mixture (so it gets warmed up and becomes more pliable) for about 30 seconds on one side, and then 30 seconds on the other side). And I'm done!

Then I simply put the tortilla on a plate, and put the bean mixture on the tortilla. Top with cilantro, salt, pepper, tabasco, vegan sour cream, whatever. How awesomely delicious does this look?

Breakfast is served!

It's a surprisingly large and very satisfying meal for only 3 points.

I enjoy this meal so much, I have been making them as quick dinners or protein packed snacks over the weekend. The great thing is it's so versatile - just vary the beans or vegetables and you have an exciting new meal every time.

OH YUM!!! Have you ever made fava beans? I just started cooking with them from the farmers market... YUM.

I have a yummy new snack I wanted to share with you...
1 tblspoon wheat free/low sodium soy sauce
1 tblspoon sesame goddess dressing from wholefoods
1 teaspoon olive oil (also do a splash of lemon or lime juice)
combine liqiuds and pour over
1 cup shelled edamame
and I add whatever chopped fresh onions etc I have...
stir till coated and snack! SO YUMMY

Glam- I sent you a personal email. I'm psyched for you an glad you embraced the "get back up" concept!

Debra- I've been learning more about the dairy industry and am not comfortable with supporting it anymore. I don't like to talk about it because I am not trying to convert anyone, I'll just say it's a personal decision, and one I feel like I need to move towards.

Morgan- That's great! There's plenty of meatless (and easy) dishes you can prepare. This one is super delicious and the protein/fat combination really satisfy. I love this new breakfast!

It's like you read my mind this week! I've just been griping about how I'm STARVING when I get home from work after being there from 7pm-7am. I often don't crave traditional breakfast foods either, plus I don't want to spend a ton of points b/c I pretty much eat and go to sleep. This is a great 3 point idea. I'm excited to try it out!

I think something that has helped me in eating healthier is realizing that breakfast doesn't HAVE to be "breakfast food" (cereal, eggs, pastries, etc.), but really just needs to be something appetizing. I think that once I got past that, it opened up a lot of options!

That looks delicious! Have you tried the sprouted corn tortillas from Whole Foods? They come frozen, with near the gluten-free section, and are very delicious. Better than regular corn tortillas to me, don't fall apart as much, and are just as inexpensive.

Love the beans! I don't think I'll ever go 100% vegan, but I do love cooking out of Veganomicon - check it out if you haven't already!

Bean fanatic, I am. I usually cook a pound of dried beans almost every week and toss them in everything. =)
Of course, with hot sauce too!

LOVE black beans. Looks delicious! I'm a (former) vegetarian too, but have just started going the other direction into eating tiny bits of meat again after 18 years. I'd still eat this breakfast. Cilantro is sooo good too!

I'm glad to see you posting the beans with a corn tortilla.

One thing that drives me nuts about vegetarians (of any level) is the lack of knowledge about required proteins/complete proteins/amino acids.

I've known some 'vegetarians' who insist their diet is superior...then proceed to order french fries because it's 'vegetarian'
